Released in small batches on a need to know basis, Spy’s New World intoxicant is made with superb apples that have been nourished by glacial limestone and sheltered by diplomatic immunity and the Blue Mountains. Double-distilled and lightly aged in cognac barrels, the result is a smooth and spicy flavour with perceptible heat behind it. Toasted oak and nitrous oxide imparts notes of burnt caramel and vanilla. A memory of campfires on the shores of Georgian Bay, truth serum and pine needles are evident.
