DESCRIPTION:
Sus Scrofa is Latin for wild boar, the animal chosen as the symbol of Celler Pardas due to its frequent sightings at the vineyard. This wine is also emblematic of Pardas, as the tortured, abandoned vines were painstakingly restored by Ramon and his team.
Using 100% Sumoll from chalky-clay soil, the wine undergoes maceration and four months of aging in century-old concrete tanks. No oak is used.
Light to medium purple in colour, with aromas of red and black berries, this is an easy and supremely tasty wine. Distinctive Sumoll tannins are balanced with fleshy, bright fruit.
As with all Pardas wines, Mediterranean herbs and refreshing salinity are highly evident on the palate.
