Pedro Ximénez is a lusciously sweet Spanish sherry made from overripe grapes dried in the sun—akin to raisins. With its dark syrupy texture, enjoying a glass of PX after dinner is like drinking your dessert. This PX cask has imparted our chocolate with notes of candied fig, butter cookie, and winter spices.
Nose: Red wine cork, brown fruits, cookie, nutmeg.
Palate: Figs, allspice, butter cookie, oak, cinnamon.
Finish: Dark fruits, winter spices.
PX Sherry is the obvious choice. Other fortified wines also work well. A good Cognac (VSOP or XO) or a nicely-aged Whisky can be delightful, and even añejo Tequila can work well. Zacapa 23 rum never fails. Among cheeses, try Pyrenees sheep milk cheese, Gouda, Brie, Comté, or Gruyère.
